Mine is kind of off the cuff and super easy. DH actually used to make it when we were dating and I just took it over. We use Black Beans.
I brown some garlic and chopped onions in a tablespoon of olive oil Then I add 2 cans of Goya Black Beans Some Vinegar and Cumin to taste (we like a lot) Then just let it simmer and heat up. I usually mash up some of the beans in the pot- to give a thicker consistancy.
Then just serve over rice
Very quick and yummy.

I do it almost the same way! I cook my rice in chicken broth instead of water and set aside.
I sautee garlic and onion with a little oregano until soft - I don't brown it.
I usually do pigeon peas or pinto beans, but have also done black beans and red kidneys depending on my mood.
I almost always use dried beans that I've soaked and cooked rather than canned because that's how my dad did it. I think canned would work just as well, except I'd probably rinse and drain because they tend to be a little saltier.
I add a little apple cider vinegar (a tablespoon or so) and a packet of Sazon and heat it up. Add salt if needed - then mash some of the beans and serve over the rice!

I use a variation of this recipe. This is sort of how my MIL makes them although I will never get them to taste as good as hers! (you can use whatever beans you like but red are my favorite. also i like them really soupy to mix up with the rice) Beans

I'll try and post the real recipe tomorrow but the basic idea is onions, garlic,green peppers, pork butt, tomato sauce,sofrito and red kidney beans so so so good!
