Re: RICE PUDDING!
1 cup of long grain white rice ½ gallon of whole milk Pint of heavy cream I egg (beaten) I tsp of vanilla 1 cup of sugar 1 stick of butter
In pot add milk, sugar, butter and rice cook for about 55 mins stirring frequently. When starts to become thicker and rice is starting to clump together add mixture of I egg, heavy cream and vanilla. Cook until thick and rice is tender. Will still be a little liquidey…(not sure if that’s a word ?) will become thicker when refrigerated. Like to refrigerate overnight before serving.

Re: RICE PUDDING!
Here's mom's recipe....it is the best....
MOM’S RICE PUDDING
Ingredients:
1 cup of sugar 3 eggs slightly beaten 1 teaspoon of vanilla 3 qts. Of whole milk 1 cup of Carolina Rice (not uncle bens long grain) 1 or 2 small box(es) of raisins cinnamon for topping
Directions:
1. Soak raisins in hot water for 15 minutes or more till they become soft......then drain them
2. Cook rice in milk......After milk boils put on medium and cook and stir continuously until rice gives off creamy texture and thickens........Do not add sugar at the beginning because it tends to burn quicker...........add sugar towards the end of cooking........on a lower heat, it can take close to an hour to cook.............What I do is cook and stir....but I don’t stand over it.............just keep a close eye on it......and stir every 5 to 10 minutes so that it does not burn.......make sure you use a non stick pot.............med to large size...............
3. Gently beat eggs and add vanilla and sugar.....(if you had not already added sugar to rice) (I usually add it to the rice while cooking because I feel that it makes the mixture thicken faster. But the true recipe suggests that you add it to the egg mixture after cooking rice.)
4. After rice is cooked, remove from heat and add egg mixture stirring rapidly as you add it....(If you do not do this, it could curdle and cook the egg)
5. Add the drained raisins and stir......
6. Pour into glass or plastic container........Preferably a 9/5 rectangle.....a little shallow.......
7. Then cover with sprinkled cinnamon.................Serve with whipped topping.......... Chill in refrigerator for several hours.......... I cover the container with plastic wrap.......................Unless I have a cover for it.............................. Enjoy

Re: RICE PUDDING!
This is the best rice pudding I've ever had
A few small modifications that I make: I add a little bit of heavy cream to the milk.. so like 3/4 of a quart milk and 1/4 quart cream. AND I soak the raisins in pure vanilla extract and a little rum to plump them up before adding them in. If you don't want to do the rum, I'd still soak them in hot water and vanilla.
