Rosemary Chicken and Roasted Potatoes
I made this for dinner tonight and it was SOOOOO good.
about 8 sprigs of fresh rosemary 2-3 cloves of garlic ground thyme 4 chicken breasts about 6 medium sized red potatoes (or the potatoe of your choice) EVOO Salt & fresh ground pepper.
Cut a hole going down the middle of the chicken breast so that you can stick a sprig of rosemary inside. Do this for each of the 4 chicken breasts, and place in a baking dish.
Cut up the potatoes into bite size pieces. Mince the garlic up. Take about 3-4 sprigs of fresh rosemary and chop up.
Add the potatoes, garlic, rosemary with a little bit of EVOO into a large ziploc bag and shake up.
Add the potatoe mix to the baking dish.
Sprinkle with salt, ground pepper and thyme.
Bake in the oven at 425 for approx 30 minutes, turning the potatoes once so that they can get crispy on both sides.
Before you eat the chicken pull out the sprig of rosemary and discard.
