Poached pear over arugula, goat cheese, candied walnuts with balsamic reduction. I heat the balsamic until it reduces and has a nice consistency to stick to the greens. It's so good! If I'm in the mood, I'll switch up the walnuts for sundried tomatos.

House salad: baby field greens, tomatoes, cucumbers, red onions.
Caesar: Romaine lettuce, croutons, grated parmesan. Caesar Dressing.
Beet Salad: Cooked sliced beets, red onions all marinated with apple cider vinaigrette.
Asian Style: Mixed greens, julienned carrots, baby corn, mandarin oranges, Chow Mein Noodles, Ginger Sesame Dressing.
Tomato Mint salad: tomatoes, mint, red onion - marinated in apple cider vinaigrette.
Corn salad: Fresh blanched corn kernels, chopped tomato, chopped bell pepper, chopped red onion, basil, lime vinaigrette.
Bacon Spinach Salad: Baby spinach leaves, crumbled fresh bacon, onions, tomatoes and warm bacon vinaigrette.
Watermelon Mint: Watermelon, mint, crumbled feta tossed with honey and a splash of balsamic.
Strawberry Delight: Baby spinach, Sliced strawberries, red onion, strawberry balsamic vinaigrette.
Greek Style: Mixed greens, kalamata olives, cucumbers, Dolmades, tomato, onion, Feta cheese, feta vinaigrette
Simple Salad: Mixed Greens, Cucumbers, tomatoes, lemon juice, olive oil, s&p
Cucumber salad: Cucumbers and red onion marinated in cider vinaigrette.
I often just pick a veggie I like and serve it raw or quickly blanched with a dressing I think will stand up to it.

For my strawberry or raspberry vinaigrette dressings, I will chop the berry and pour balsamic over it. I use a moderately priced balsamic but I forget the name.. I'll check on it later. The cheapest ones are very tart to me. After the berries have masturated for a bit, I put the mixture in my mini prep or a blender with some good EVOO a clove of garlic and salt and pepper.
For warm bacon vinaigrette I cook bacon until crisp and whisk some bacon fat with red wine or cider vinegar. Then I add a little salt, pepper and a pinch of onion powder.
Basil vinaigrette is my favorite.. I put a LOT of basil leaves, 4 cloves of garlic, some olive oil, a little balsamic and some red wine vinegar in the mini prep and let it blend until it's all a thick dressing. Add salt and pepper to taste.
