Re: Salmon recipes anyone?
Here's what I do.
In a baking pan, place the salmon in a very lightly oiled pan (or dish).
Then in another bowl I throw a seasoning together which consists to your liking dashes of pepper, parsley, garlic and onion powder and maybe 1 tbsp of soy sauce. And I mix it all in about 1/4 cup of olive oil.
Then I cut tiny slits throughout the salmon and I will shove some slices of fresh garlic cloves, and some with green olives w/ pimento. Then pour the seasoning mix on top of salmon in pan. Then I will sprinkle some feta cheese on top as well.
Cover w/ Aluminum foil and bake at 400 degrees for 25 minutes. It never comes out dry. Its delicious.

Re: Salmon recipes anyone?
I take the salmon filet add salt and pepper and 1 tsp of olive oil cook on both sides take out of pan, and keep warm. I then take a sweet potato, and cube it in small pieces, add a 1/2 c water and put back in pan with all the drippings still in there. cook and stir often for 10 minutes, take out and put in bowl, in separate bowl put in dijon mustard, a small amount of red wine vinegar, salt, pepper , and 3 T of water and 1 teaspoon of tarragon. Mix and add to potatoes put on top of fish. ENJOY.
** If you need specifics on measurements FM mail me, the receipe is in my cook book! **

Re: Salmon recipes anyone?
Costco has a few great salmon dishes. One is a stuffed salmon which is delicous and the other is a salmon fillet w/some sort of a butter topping. You remove the cover on both and put in the oven and they are great!

Re: Salmon recipes anyone?
I combine cherry tomatoes, chopped parsley, garlic powder, salt, pepper, olive oil, and cayenne.
sprinkle some more salt and pepper on each piece of salmon and put a thin slice of lemon on it and small pat of butter (if Im serving to guests otherwise I leave the butter out) pour the mixture on top and close up the tin foil.
Everyone loves this recipe! I always buy the salmon fresh and cook it right away. I find its never as soft if you've had it in the freezer/fridge.

Re: Salmon recipes anyone?
Made this the other night it was delicious....... use salmon filets. (3)
In a bowl whisk 2tbsp olive oil, 2 tbsp. lemon juice, 2 tbsp, honey and 2 tbsp of grainy dijon mustard.... put fish skin side down in a baking dish... our over and bake at 425 for 10-11 min.. til done. Was so moist, sooooooo delicious and easy!! I put it in a square baking pan so the fish was close together and the sauce didnt spread out too much and burn. Came excellent!
