We've stayed at the Fairmont (which we love, and it's got one of the quirkiest lounges I've ever seen in a hotel, the Tonga Room). Its design is very similar to the Plaza Hotel in NYC. We also stayed at the Hotel Monaco which was lovely (coffee & pastries in the AM and a wine/cheese reception each evening); it's also pet friendly (but the area if you stroll out to the left could be a little sketchy if you go too far!)
