Satisfying low carb dinners
DH and I are trying to lose weight so we are trying to do very low carb or no carb dinners. I am so tired of salad with chicken and plain meat/fish and veggies. Do you have any dinners that are more satisfying but healthy?

I would learn how to cook a variety of veggies in different ways and cook with whole grains. If you use herbs, spices and some condiments it will make your meals tasty. If i fill half my plate with veggies and add 3-4 oz of lean protein i am usually satisfied. I do eat some pasta and bread but just limit the serving size.
Follow the weekly menu thread on this board as a lot of the ladies here also eat low carb. Skinnytaste.com is also a good place to start for recipes.

In the winter I roast a lot of vegetables. I will usually make a mix of eggplant, zucchini, onion, mushrooms and garlic. Sometimes adding quartered plum tomatoes or baby carrots. Whatever looks good at the market and is not too expensive. - Roasted string beans with thinly sliced shallot. - Roasted brussel sprouts with bacon and a balsamic drizzle.
My favorite "condiment" is roasted cherry or grape tomatoes. Toss with olive oil, slivered garlic, chopped rosemary and thyme, sprinkle with sea salt. Roast at 400 about 20 minutes or so until they just start to split open. We like this on chicken and fish.
We do eat carbs at dinner, a habit I cannot break, but limit the serving size and eat more veggies and salad. DH doesn't eat lettuce so his salad is a raw veggie blend.

I make chicken in every way possible..I find that seasoning it and topping it with spinach, tomato, asparagus or avocado and cheese is very satisfying.
I'm not sure if you're a fan of hot sauce, but one of my favorite dinners is grilled chicken topped with 1/4 cup of mozzarella and some hot sauce.
I'm also a big fan of zoodles and spaghetti squash as sides - I usually season with a little olive oil, salt and pepper.
Sometimes I'll make a big thing of tuna salad with light mayo and some mustard and I'll eat it with celery sticks instead of on bread.

I have a south beach book that's has a lot of these:
Meats: balsamic glazed steak, cracked pepper steak, season chicken and marinate in light italian dressing, London broil
Veggies: roasted veggies - eggplant, squash, string beans; roasted tomatoes, cauliflower mash, loaded cauliflower bake.
Stuffed peppers, tomatoes roasted with mozerella, pepperoni and sprinkle with salt pepper and basil. caprese salad.
I just got put on the spaghetti squash from these site. The buffalo chicken spaghetti squash was to die for!
Chicken or steak fajitas or enchiladas with whole wheat tortillas, as a cheat.
These are what I can think of on top of my head!

Thank you for putting up on Spaghetti Squash, I didn't even know thos existed. I made the buffalo chicken spaghetti squash before my oven broke and it was awesome. My DH and DS loved it and I can't handle spicy and ate it all up even though my mouth was on fire! Lol
Can't wait till my oven gets fixed to try the other recipes you posted. Lol

Satisfying low carb dinners
My mom used to be big on Atkins back in the day and she used to make this dish that was soo good.
You cut up zucchini, squash and onions and sauté with garlic. Then add crushed tomatoes and seasonings. Then add lots of parm cheese. Layer over chicken breasts and top with mozz.
Sooo good and filling!

We tried this one too and it was so good!
We top spaghetti squash with meat sauce or chili. Skinnytaste has a spaghetti squash primavera recipe that was good too.
You could do lettuce wraps with all kinds of fillings. I buy boston lettuce and we fill it with buffalo flavored chicken, shredded carrots and light blue cheese dressing.
Bruschetta chicken is yummy. Just grill up some chicken, marinate chopped tomatoes with garlic, basil, balsamic, and a little olive oil and then top the chicken with that.
We tried mario batali's eggplant parm recently and it was easy and so good. There's just a little breadcrumb sprinkled on top at the end rather than breading the whole slice.

Satisfying low carb dinners
My husband and I eat paleo...my husband is on an even stricter diet, but we love to cook...our go tos are:
Maple mustard Pork: boneless Pork chops marinated in maple syrup and mustard with crushed garlic salt and pepper. Cook in cast iron skillet. I also make some more of the maple mustard mixture to go on top.
Sauteed kale with bacon, shallots, garlic, walnuts and mustard
Roasted asparagus with salt and pepper and avocado oil
Steak with sauteed onions and mushrooms with balsamic.
coconut crusted air-fried shrimp
Steak with pineapple salsa
Taco bowls: chopped meat or chicken or air fried shrimp/fish with all the taco toppings on a bed of lettuce
Shrimp marinated in lemon juice, avocado oil, garlic, salt pepper, shallots, ponzu sauce and parsley then cooked in cast iron
bunless burgers with onions bacon cheese avocado
Pesto chicken with lemon
Roasted sweet potatos with thyme and rosemary
Arugula salad with cheddar, apples and strawberrys with lemon juice and avocado oil
Zucchini tomato bake: Slices of tomato and zucchini with avocado oil with salt and pepper bake in the oven until cooked
