Sausage & Peppers recipe
Anyone have an easy and yummy one?? DH is partial to chicken sausage too if that is different than the regular kind. Thanks!

I cook it the old school (read un-healthy) way that my grandmother used to:
I use a combination of sweet and hot italian sausage. Cut each sausage link into about 3-4 pieces. Fry in a pan of olive oil until browned and cooked through. Remove sausage from pan - DO NOT discard oil.
Cut onion into slices. Fry those in the same oil used for the sausage (add more if necessary) until soft and tender. Cut italian peppers into long strips. Add to onions and cook until peppers are also soft and tender.
Put sausage back in the pan with the onions and peppers and mix well.

I make this Giada one all the time...it's sooooooo good and easy...I have eaten it all alone, with pasta, and on rolls...all yummy!
Ingredients
* 1/4 cup extra-virgin olive oil * 1 pound sweet Italian turkey sausage * 2 red bell peppers, sliced * 2 yellow onions, sliced * 1 teaspoon kosher salt * 1 teaspoon freshly ground black pepper * 1/2 teaspoon dried oregano * 1/2 cup chopped fresh basil leaves * 4 garlic cloves, chopped * 2 tablespoons tomato paste * 1 cup Marsala wine * 1 (15-ounce) can diced tomatoes * 1/4 teaspoon red pepper flakes, optional * 4 to 6 fresh Italian sandwich rolls, optional
Directions
Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.

yep, same here. Except I use only hot sausage b/c that's what DH & I like...throw it on some Italian bread, yummm.
Sometimes, we also add part of a can of stewed tomatoes, which is delish too.

In a boiler foil (for easy cleanup) seed and slice bell peppers (I use green and red). Slice three large onions. I slice up some mushrooms too sometimes. Toss with olive oil, salt, pepper and garlic powder. I put uncooked sausague on top and throw in a 350 oven till sausague is brown and the peppers are soft. Then I slice the sausage and toss in.

i cook the sausage in oil(hot sausage) then remove from pan. Add onion and pepper strips. when its done i put the sausage back in and cover with a can of diced tomatoes. put it on some italian bread, delish!

i do mine the easy easy way
put a roll of chick. sausage in a pie plate..bake at 400 for 45 minutes
in a skillet saue onions and peppers with a little evoo
that's it..

FYI - My ex-H liked spicy sausage and I liked sweet. I'd cut his in half an mine in 1/4 - on an angle so we could tell them apart.
just in case you didn't want chix sausage.
