I sweat down onions, celery and add mushrooms all in butter. I then add in fresh herbs and ground sausage meat until browned. I deglaze the pan with sherry or red wine, add some low-sodium broth and stuffing cubes (I mix country style with cornbread)

sausage stuffing
I brown ground sausage with celery, onion and garlic. I mix it all together with white rice and a little parm cheese. Then bake for around 30 mins.
