Share your Easter menu this year please!
We're having Ham...probably some kind of potato/veggie dish...but I'm kinda stumped on the rest.

Apps: Cheese and crackers, french onion tarts, mint pea salad, puff pastry stuffed with goat cheese and sundried tomatoes, palmeires, olive salad, bruschetta
Dinner: Herb crusted roast beef, roasted potatoes, candied carrots, creamed spinach, asparagus, homemade rolls, caesar salad
Dessert: Banana cream pie, brownies, cookies, possibly making the 7 layer cake

Apps: Brucuitto (sp?) wrapped asparagus, stuffed mushrooms, shrimp cocktail
Pasta: Penne Vodka
Main: Spiral Ham, Prime Rib, steamed veggies, some kind of potato
Dessert: Cheesecake & maybe Italian Cookies

So far on the menu and I am sure that I will add more the last minute
Antipasto, Proscuitto and cheeses
Stuffed shells (plus all the meats from the sauce)
Prime Rib, Spiral Ham, veggies and some type of potato
Mini Cheesecake tarts, cookies, cupcakes for kids, chocolate pudding pie (a must have for Dh and SIL), and Cannoli

Had to omit lamb since not many eat it and ends up being a waste......
