Sharing WW (4-8 point) Dinner Recipe: Spinach Lasagna Rolls

I'm not on WW, but I do subscribe to this blog and this is the first (and now definitely not last!) recipe that I've made from her site. I did make a few changes though, but I'll include the original recipe!

The reason I said 4-8 points is because IMO, 1 lasagna roll was NOT enough - so I had 2. I made this for 4 people (with me being the only one watching my weight) so here's how I did it:

I used regular lasagna noodles - 11 of them. I kept the same amount of spinach and ricotta. I used a little less parmesan cheese. I also used a 25 ounce bottle of Napa Valley Bistro Marinara Sauce (the only bottled sauce I like!). For my portion, I put about 1 tbsp cheese (I used part-skim mozzarella from Costco that I shredded in my food processor) and on the portions for the other 3 adults... I LOADED them with cheese! (These guys are major cheese lovers). Everyone loved the dinner and nobody knew it was weight watchers! So each of the guys had 3 Spinach Lasagna Rolls while I had 2. I served with a simple mixed greens salad with a splash of fresh lemon juice, s&p.

Spinach Lasagna Rolls

Gina's Weight Watcher Recipes

Servings: 9 • Serving Size: 1 roll • Calories: 188 • Points: 4 ww pts

* 9 lasagna noodles, cooked
* 10 oz frozen chopped spinach, thawed and completely drained
* 15 oz fat free ricotta cheese (I like Polly-o)
* 1/2 cup grated Parmesan cheese
* 1 egg
* salt and fresh pepper
* 32 oz tomato sauce
* 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded

Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.

To serve, ladle a little sauce on the plate and top with lasagna roll.

I think the points come from the pasta and all the cheese (even with low fat version)

OK... I have been obsessed with her recipes since you posted yesterday.

The girl should make a cookbook.

I have never been so excited to try on some recipes.
