Shrimp question...cooking
I was planning on making shrimp scampi tonight, but forgot to tell the person getting me the shrimp that I needed uncooked. They got me cooked....can I use it? /if so, how should I adjust the recipe?

Re: Shrimp question...cooking
Hmm I never use uncooked shrimp (I'm always too scared of overcooking) - but I would probably just make the sauce separately and then saute the shrimp for a minute or 2 just to heat through with the sauce??

This is exactly what I was going to say.

Re: Shrimp question...cooking
I would not use cooked shrimp for scampi. Shrimp overcook in a second. Just warming the cooked shrimp will toughen them. I'd use the cooked shrimp for a nice shrimp cocktail or salad.

I'm sorry! I'm sure it would be fine to make the sauce and then throw the thawed shrimp in at the last minute to warm them.. don't let my weirdness deter you from trying! I'm just really kind of a stickler with shrimp because it's so easy to overcook.
You could go and get some nice steaks (Beautiful Shell Steaks at Meat Farms for 3.99/lb) - grill those up and serve with a nice chilled shrimp cocktail for a special surf and turf!
