Shrimp recipes, please!
I am looking for some good recipes for shrimp that is not fried. Stir fry....DH is not a big fan of vegtables but i can get away with some. Maybe some good sauce ideas.

Kung Pao Shrimp
• 3/4 cup low-sodium chix broth • 1/4 cup sake or rice wine • 2 TB reduced-sodium soy sauce • 2 TB honey • 1 TB chili-garlic sauce • 1 TB cornstarch • 1 tsp Asian (dark) sesame oil • 2 tsp canola oil • 1 lb medium shrimp, peeled & deveined • 3 scallions, chopped • 2 TB minced peeled fresh ginger • 2 garlic cloves, minced • 4 cups broccoli florets • 8oz can bamboo shoots, drained
Instruction • Combine the broth, sake or rice wine, soy sauce, honey, chili-garlic sauce, cornstarch & sesame oil in a bowl— set aside. • Heat a nonstick wok or large, deep skillet over medium-high heat until a drop of water sizzles. • Swirl in the canola oil, then add the shrimp. Stir-fry until just opaque in the center, about 3 minutes—transfer to a plate. • Add the scallions, ginger & garlic. Stir-fry until fragrant, about 30 seconds. Add the broccoli & bamboo shoots— stir-fry until crisp-tender, about 2 minutes. Add the broth mixture & the shrimp. Cook, stirring constantly, until the mixture boils & thickens, about 1 minute. • Yummy when served over rice!

My DH loves this....I don't have a recipe written down, I just kind of make it but I'll try.
Boil a pound of whole wheat lunguini, while that is boiling, I make the sauce.
Put a little olive oil in a pan with some chopped garlic and onions. let it cook a little bit. Add 2 cans of diced tomatoes. Once it is all heated through I add the shrimp. When pasta is ready add it right into the pan (with a little bit of the cooking water) and mix it all. Right before serving sprinkle with a big handful of breadcrums and mix well.

Shrimp scampi (super easy!)
This is one of those recipes that you don't really need to measure out since the ingredients are SO basic. It's really fool proof!
You'll need:
1 lb shrimp (peeled, deveined, tails on) 1/2 cup butter (that's one stick) 1 tbsp. dijon mustard 1.5 tsp. fresh lemon juice 1.5 tsp. chopped garlic 1.5 tsp. chopped fresh parsley
Preheat oven to 450.
You can probably finish the rest of the preparation before the oven is heated!
In small saucepan over medium heat, add all ingredients except for shrimp. Place shrimp in shallow baking dish. When butter has melted, pour mixture over shrimp and bake in preheated oven for 10-12 minutes (until shrimp are pink). ENJOY!
