SIMPLE Green Salad

Hi! So I may be hosting a very small group on Thanksgiving, and let's just say cooking is not my forte.

DH agreed to handle the turkey, thank God, and I think I can do some simple sides and apps.

Does anyone have a really EASY green salad/dressing recipe?

I like to get a bagged spring mix and some argula and add thinnly sliced red onion, some cucumber, walnuts and craisins. If you like gorginzola or some kind of crumbly cheese you can add that but I detest that kind of cheese so I don't.
As for dressing, I just buy a bottle of creamy balsamic...
I get the marie's or one of the refrigerated brands in the produce aisle. The creamy balsamic tastes better than the oil kind imo. You can also do a raspberry vinaigrette, but i am not a fan of sweet dressings.

Arugula, cherry tomatoes, pine nuts, and Parmesan cheese.

Toast the pine nuts while you are washing the lettuce and halving the cherry tomatoes. When they are slightly browned, put them on the lettuce and tomatoes.

Wait a few minutes to add the cheese or else it will melt.

In the meantime, make a dressing with EVOO, lemon juice, and salt and pepper. Put the dressing on the side. You could even put the nuts on the side and put it all together. So quick and easy!

This (and I also hate raspberry vinaigrette). I like craisins and nuts in fall salads. You could do goat cheese if not a fan of blue.

If you wanted a quick dressing, I do evoo, vinegar or lemon and TJ's 21 salute seasoning. But bottled is fine and if it bothers you, put it in your own container and no one will know the difference!

Thanks all! Okay, sounds simple enough. I plan on making sure my guests drink plenty of wine so hopefully they won't notice the food so much haha. Heading to the supermarket now Chat Icon

For the holidays, I love crisp romaine with matchstick cut Bosc pears and apples, a little shaved red onion and ribbons of sharp cheese such as parmesan or parmigianno reggiano. Serve it with a light vinaigrette dressing.

I usually buy a spring mix and argula. Delicious and no romaine

Eh, skip it altogether. Make a butternut squash soup or some pumpkin ravioli as a first course.

By "make" I mean get a few containers of soup from TJs or some of their pumpkin ravioli.

Arugula
Chopped Apples (I don't even peel)
Shaved parmesan (get the good stuff and use a peeler)
Salt
Pepper
Squeeze juice of one lemon
olive oil

Mix with your hands. Always amazing. I think the apples will go nicely with other traditional flavors.
