Skinless - Boneless Chicken Breasts

I made piccata and orzo last night... they gobbled it right up! And it's sickeningly easy.
If you are interested, here's how: Make orzo or rice as usual. Make a mixture of flour, salt, pepper, granulated garlic and grated parmesan cheese. Heat about 2 Tbsp. Olive oil and 2 Tbsp. Butter in large skillet (no butter if you are on a diet). Dredge chicken in flour mix and put right in the pan. Cook on each side until golden and chicken is cooked through. Remove to plate. Add white wine or chicken stock (about a cup) to pan and deglaze. Toss in a small palmful of capers and cook down until sauce is a little thickened. Squeeze in the juice of a lemon, whisk well and pour sauce over chicken. Garnish with parsley and lemon slices. Serve with rice or pasta.

Directions: Melt butter in large skillet over medium-high heat. Add garlic and cook 30 seconds. Stir in chicken, salt, thyme, onion powder, sage, and peppers; cook until lightly browned, about 3 minutes. Stir in green onions; cook 1 minute more. Gradually add cream. Increase heat to high and boil until slightly thickened, about 2 minutes. Combine chicken mixture, hot pasta, and parsley in serving bowl; toss to mix. Serve with Parmesan cheese.
For the chicken, I just pound out chicken breasts, rub with a little EVOO, salt, pepper, cajun spices, season all, crushed red pepper, melt some butter in a cast iron skillet (or you can use the Foreman) and cook till done. Slice them and toss with pasta and sauce.
