skinnytaste meatloaf cupcake help...
I am making these tonight, and forgot the zucchini Can I just eliminate it? Is there something I can put in place of it if its necessary? Thanks!

You don't really need the zucchini. She adds it just to bulk up the recipe, so that it makes more meatloaf using less meat, therefore saving you some fat and calories.
If you really wanted to add a veggie, you could probably throw some spinach in there. Just make sure you thaw and dry it well if you're using frozen.
But, it'll be fine without any added veggies. HTH!

So funny I made these last night! They are awesome!! Like PP said I think you'll be fine with out the zucchini, it just seems like a filler.
