Slacked off this weekend, Sorry! 7-17 recipe!
Chicken Florentine
Ingredients:
2 Shallots, chopped 4 cloves of Garlic, minced 2 cups of White cooking wine Handful of fresh parsley, chopped 1 cup Heavy Cream 1 1/2 lbs thinly sliced chicken cutlets 1 bag of baby spinach 2 cups of flour 1 stick unsalted butter Olive oil 1 cup parmesan cheese 3 eggs, beaten (add sour cream, appx 1 tbspn) Pre-heat oven to 200 (Warm setting)
Heat 1 cup of olive oil in large frying pan. Add shallots, garlic, and parsley. Fry until just brown, DO NOT BURN the garlic, it will ruin the dish. Put burner on low. Add spinach. Heat on low.
Dredge cutlets in egg, then flour. Add 1 stick of unsalted butter to pan. Add chicken cutlets, and sear on each side. Put on a cookie sheet, and put in the oven to keep warm.
When all cutlets are done, add 2 cups of White cooking wine, and put chicken in. Simmer for 15 minutes, until alcohol burns off. Add wilted spinach. Cook for 5 mins, then add heavy cream. Let cook for another 10 minutes.
Transfer to casserole dish. Sprinkle with parmesan cheese, and bake at 300 for 15 mins.
Serve and Enjoy!!!!
