Slow Cooker Short Ribs
My neighbor made these and they were delicious and easy!
Slow-Cooked Short Ribs
SERVES 6 ACTIVE TIME: 25 min TOTAL TIME: 4 hour 25 min - 9 hour 25 min
12 pieces (about 4 lbs) beef short ribs Pan Searing Flour 1 Tbsp Wegmans Vegetable Oil 2 Tbsp chopped Peeled Garlic 1 bag (8 oz) Cleaned & Cut Mirepoix (veggie mix) 6 Tbsp all-purpose flour 2 cups dry red wine 2 cups Beef Culinary Stock 3/4 cup Canned Cut Tomatoes with Basil 1 cup coarsely chopped white mushrooms 2 whole dried bay leaves 1 Tbsp fresh chopped thyme Salt and pepper to taste
1. Dust short ribs with pan-searing flour. 2. Heat oil on MEDIUM in large braising pan. Brown short ribs lightly on all sides, 8-10 min. Remove short ribs; place in cooker. Discard all but 1 Tbsp oil. 3. Add garlic and mirepoix; cook 2-3 min more, stirring frequently. Add all-purpose flour; stir. Add wine; reduce to syrupy consistency (3-5 min). 4. Add stock; bring to simmer. Pour stock mixture over meat in slow cooker. Add tomatoes, mushrooms, bay leaves, thyme; stir slightly to mix. 5. Cover; cook 4-5 hours on HIGH or 7-9 hours on LOW. Transfer short ribs to serving platter. Discard bay leaves; stir remaining thyme into sauce. Season to taste with salt and pepper. Pour sauce over short ribs; serve.
