Re: Snow tubing
We always liked Camelback. The best time is to go during the week and non-holiday. When we went a few years ago, they had a special, if you stay at the hotel, Sun-Thur. The snow tubing was free. Not sure if it is still in effect.

Your best bet is to find a hotel nearby Tannersville that has an indoor pool.

Re: Snow tubing
We like Campgaw in Mahwah, it's 30 minutes from the GWB. Perfect for one night. I live in Eastern Suffolk, so I wouldn't drive all the way to the Poconos for 1 night. At Campgaw we stay at the Courtyard or Fairfield Inn. Both have a pool.
