I recently made Flaxmeal muffins and I will have one of those with cottage cheese or yogurt. I sweeten my plain yogurt with an Equal, cinnamon & vanilla. Same with my cottage cheese & I add slivered almonds. The muffins themselves are not great but I at least feel like I am having something "carby" even though I really am not. I've also thought of making an icing for it with cream cheese & Equal but I haven't done that yet.
I make flaxmeal pancakes but I am not sure how they reheat to bring to work. I will also have eggs & cheese & turkey bacon but I do that when I have breakfast at home.
ETA: I only made each of the flaxmeal recipes once so I haven't played around with them to doctor them up but let me know if you'd like the original recipes.

I've made those mini veggie quiches (Phase 1 - recipe is in the original green book) and I keep them frozen. I bring 2 to work and reheat them in the microwave.

But how is everyone getting their veggies in the am?
I too used to make the quiche cups but that still wasnt even enough veggies so I used to force down celery at 9am, ugh.

I definitely don't get lots of veggies at breakfast but I do for my AM snack. I will put peppers, onions & tomatoes in eggs. Veggie juice will also do it.

Yes veggie quiche!!! (I have made nearly every recipe in the book)
1 package frozen chopped spinach 3/4 cup liquid egg substitute 3/2 cup shredded reduced-fat cheese 1/4 cup diced green bell peppers 1/4 cup diced onions 3 drops hot-pepper sauce (optional)
pre-heat oven to 350. Microwave the spinach for 2 1/2 min on high. Drain all liquid. Line a 12-cup muffin pan with foil cups (I just used pam & put the finished ones in tupperware) Spray with Pam
Combine all ingredients in a bowl, put in muffin cups & bake for 20 mins, until a knife inserted comes out clean.
I personally add some diced hot peppers because we like spicy food.
