Spinach pie recipes?
I am dying for spanakopita and am in search of a really good, authentic Greek recipe. Can anyone help satisfy my craving? lol TIA

1 pkg filio dough 3 pkgs feta 2 onions diced 4- 6 bags fresh spinach dill s& p
I make this alot, its a whole sheet / pie of it , so the ind are based on that
dice up the onions ( smal) fy them up in a lil evoo. once they are soft add the spinach until it wilts. Its alot of bads , but id rather use fresh than frozen & it wilts down to nothing .
once the spinach & the onions are cooked down add s& p to taste. Add approz 1-2 tblsp fresh dill. if you dont have fresh dryed is fine, just use less.
transfer the spinach mixture to a colendar & let all the oils & liquids drain out . I usually out the colendar over a bowl & mush the spinach to get most of the bulk of the liquids out & then i let it sit in the fridge for a few hours.
once its completly coooled & drained add the crumbled feta to the mix. The chunkier the better ..
now take a sheet of philo & lay it on a cookie sheet that has been sprayed with pam. I usually over lap 2 sheets to the length of a large cookie sheet . after laying the sheet brush the sheets with melted butter . continue this 4 times . after layering each sheet brush with butter .
after the 4th ( u can even do more,) put the spinach mixture onto the sheets of philo . cover just until it meets the edges. Next start to layer the philo again , after each sheet brushing with butter.
once the last sheet is done , bruch the top with butter & then make slits as you would if your going to cut a piece of the pie, ( this prevents the philo from bubbling up too )
bake @ 375 until the philo is browned approx 35 min or so ..
This frezzes really well too ,,
hth .., Im not the best with typing recipe direction , but its fairly easy , the hardest part is getting the philo not to stick ,

This recipe sounds delicioso! Do authentic Greek restaurants use dill?? I wonder lol

This is pretty much my recipe but I add some cottage cheese or ricotta and an egg to the mix.
