We've stayed at All Star Music and Sports and The Contemporary. The Contemporary is so convienient but expensive. The All Stars IMO are the best for your money and for kids. We are staying there again in March.

I stayed at the Grosvenor which is on the grounds and would def stay there again. It was inexpensive and you get almost the same amenities.

We stayed at:
Old Key West (our friend is in the vacation club and sold us his points) Caribbean Beach Pop Century
and we are staying at Shades of Green in Feb (My dad is retired military and it is on Disney grounds)
My favorite so far was Caribbean Beach-there was a ton of stuff to do at the hotel. Pop Century is definitely more of a "value" resort.

Boardwalk Beach Club Old Key West Saratoga Springs All Star Sports
On our 1st trip down we stayed at All Star and loved it, we have since bought DVC

We did the All Star Music as well. Did the Polynesian years ago. We spent most of our time at the parks, and only came back to the hotel to sleep, so we didn't need to get a fancy room, so the All Star was definitely a good idea for us.

We went 2x and stayed a tthe Polynesian.
I hate taking the bus and having to take my 2 boys in and out fo the stroller so we wanted a hotel on the monorail to not have to dela with it going to 2 out of the 4 parks.

I have stayed several times at the Animal Kingdom Lodge (without kids) and we loved it - we plan on staying there again some day with DD. But for now DD's first trip to WDW is planned for September/October and we have a reservation at the Polynesian. We picked the poly b/c it has the monorail and we thought it was easier with DD. I stayed at the Poly a few times when my parents took me when I was little.
If you are renting a car Animal Kingdom Lodge is great - the buses there are great too - they don't share so they are quick - if you don't mind lugging all your stuff on them.

Right now Animal Kingdom Lodge is doing big renovations. That's why we chose not to stay there. I heard it's really nice though...
