Spinoff: Herbs/Spices - fresh or dried?

I like to use fresh herbs and spices, but they always go bad by the time I get to them, so I end up using the dried.

If you use fresh, how do you make them last?

I put them in a glass filled with water on the counter and they usually last pretty long.

you can clean them and rinse them and then freeze them in ziplock bags.

If I'm going to use them within a week I usually keep them in a glass of water in the fridge (it's what my dad always did). I wrap the top in paper towel and put the stems in a tall glass.

I only use fresh for certain spices...like garlic and cilantro. I don't care for fresh parsley all that much. Garlic lasts a while so that's no issue there. When I buy fresh cilantro, I only buy a small amount because I know I won't be using that much. I only use it when we make fajitas - yum!!

Oh yes - a very easy yummy one!

I don't measure though so it's not precise.

Flank Steak 1 - 1.5lbs
Italian dressing
2 fresh limes
approx 1/4 - 1/2c of fresh cilantro

Drench steak in italian dressing, lime, and cilantro and marinate covered in fridge or large ziplock bag for at least 1/2 hr.

1 large white onion
1 red pepper
1 green pepper
1 fresh lime

Slice onion and peppers coarsely (you want think slices, not flimsy ones) add juice from one lime and saute about 5 minutes (do not overcook), add flank steak sliced into strips and cook until done.

You will also need for the fillings:

Sour Cream
Shredded Cheddar or Monterey Jack Cheese (I prefer a mix of the two)
Chopped tomatoes
Shredded lettuce
Guacamole (if desired)

8 - 10 10 inch FLOUR tortillas (follow package directions for warming)

**Sometimes I broil or grill the steak first and then add it to the onions & peppers

PS - I HATE spicy foods, so this recipe is not HOT at all. If you want to make it hot, you can add chilli peppers to the onion & pepper saute.

There are only 2 spices I prefer fresh like Cilantro & Baisil. The rest I can do dried.
