Spinoff on Jarred Tomato Sauce
Can someone post a recipe they used to make there own sauce. Mine never comes out just right and i have tried a few recipes.

I couldnt post an exact recipe since I do it all by sight...but first I brown some chopped garlic and minced onions in olive oil, then add in the tomatoes. I use fresh tomatoes in the summer, or cans of whole peeled tomatos if I cant get them. If I use fresh tomatoes I run them through a mill otherwise I put them in the blender to puree them. I add some fresh basil and let it cook down on low heat. You can salt it to taste.
If the tomatoes are very acidic you can add carrots to the sauce to sweeten it, DH's aunt just adds sugar which makes for a different sweet sauce (it's very tasty). Depending on my mood I sometimes add a little red pepper. You can add oregano too but I'm not a fan of it.
Cooking browned meatballs, sausage or other meats adds alot to the flavor too. DH likes potatoes in the sauce too to eat later.

1 giant can whole peeled tomatoes (or two smaller can) 1 can tomato paste 3 garlic cloves a few tbsp olive oil salt and pepper oregano parsley basil
Put the tomatoes in a blender and liquefy them. Strain out the seeds.
Sautee garlic in a sauce pot just until you can smell it. Add liquefied tomatoes and bring to a boil.
In a separate small pot, bring about 2 cups water to a boil an add tomato paste. Break down with a fork and liquefy and bring to a boil. Add to tomato/garlic mixture.
Add salt and pepper to taste and about a tablespoon each of oregano, parsley, and basil.
Cover and simmer on stove top for at least one hour.

Mine is pretty simple:
4 Tablespoons olive oil, not extra-virgin 5 garlic cloves garlic, whole 1 large or 2 medium yellow sweet onions, finely diced 2 (28-ounce) cans crushed tomatoes ( I use the brand Red Pack) 1 teaspoon salt 1/2 teaspoon black pepper 1 handful fresh basil leaves
In a medium saucepan over medium heat, add oil. Once heated add the onions and whole garlic cloves to the pan. Cook over medium heat until soft and slightly brown. Next add the canned crushed tomatoes, basil, salt and pepper and stir. If you like your sauce thick, leave as is. If not, you can thin it out with 1/2 can of water (the empty tomato cans) Allow the sauce to come to a simmer, reduce heat and cook for 1 hour.
My grandma always uses whole cloves of garlic and then we pick them out. Not sure why but you could always slice or mince them.

Got it from this site and love it, I usually leave the sugar out -
Olive oil (coat the bottom of the pot) Thinly sliced garlic (I actually just use minced garlic) 3 lg. cans of tomato sauce (I use Tutto Russo or Red Pack) 1 lg. can tomato puree 1 small can of tomato paste small palm full of dried parsley small palm full of dried basil 2 bay leaves salt and pepper 1/2 cup grated cheese (I also throw in a cheese rind if I have one) Small onion. Peeled, but leave whole 1/4 cup of sugar
Add oil to sauce pot. Add garlic, DO NOT BURN. I cook until I can mash it with a fork. Use very low heat. Add rest of the ingredients, and stir well. I let my sauce sit on medium heat, mixing frequently for about 5 hours. When done, remove the whole onion & bay leaves.
Sometimes to change it up I will add browned ground beef or pork for a meat sauce.
