It's probably just Corned Beef because it's the traditional meal for St. Patrick's Day which is a "feast day" for every saint. This is probably why the restriction on meat was lifted too.
ETA: "The feast day of St. Patrick has been observed in Ireland on March 17 for thousands of years. The date falls during the fasting season of Lent, but on St. Patrick's Day the prohibitions against eating meat were lifted, and the Irish would celebrate their patron saint with dancing, drinking, and feasting on the traditional meal of Irish bacon and cabbage."

I was just about to say that Corned Beef is not what the people in Ireland traditionally eat on St. Patrick's day. It is most likely ham or bacon. I never ate as much Corned Beef as I have since I came to the US - and I don't like it!
As a child we were always allowed to break our "Lenten Fast" on St. Patrick's day. And it's a feast day and national holiday, so no work or school. I still follow that over here

They usually make that exception although, they do ask that you pick another day that week to not eat meat.
