starting a recipe book for easy meals..please share yours

I will going on maternity leave soon so I want to start a recipe book for myself on quick and easy meals.

Please share your fav, easy recipe.

DH and I eat everything so we are open to all meals.

Boil/leftover chicken, cut up, heated with salsa, serve over rice. Have more time - add black beans, corn, cheese.

marinate chcken/steak and just broil/bake

shrimp scampi - garlic, evoo, butter, shrimp, pasta

split pea soup - package of peas, water, onion, garlic, (and being raised jewish) hotdogs

pretzel chicken - leftover prezels ground up, 50% pretzel crumbs, 50% breadcrumbs. Put chicken in honey mustard, then into breadcrumbs - bake

cooked chicken, frozen broccoli, campbells cheddar cheese soup or ragu double cheddar sauce, breadcrumbs, bake

tacos - ground meat/turkey, spice pack, and you can pick up the fixings at the salad bar. you can also make with leftover nachos (DS LOVES chips for dinner) he thinks i'm crazy

white fish with lemon, butter capers and some old bay - just melt butter, add lemon zest/juice, pour over fish, add some capers and bake

check out reynold's foil website - they have some great foil packets you can make ahead and freeze plus, no clean-up.

are you looking for just dinner options or all meals? Also when you say "easy" meals do you mean easy to prepare, few ingredients, quick meals or a combo of all three? Well, here are my personal easiest/quickest meals and how I serve them:

-Chicken Caesar Salad
chicken, spices for chicken (i use montreal chicken seasoning), lettuce, tomatoes, cucumbers, croutons, caesar dressing

Season the chicken, grill it and cut it up. In a bowl, toss the lettuce, tomatoes, cucumbers, croutons. Add the chicken and mix altogether with the caesar dressing.

-Pasta in a Meat Sauce (with or without Sundried Tomatoes)
cans of tomatoes, evoo, garlic, fresh basil, dried oregano, dried parsley, onion, spices for the meat, a package of chopped turkey (or beef), box of pasta, optional: sundried tomatoes

Cook the pasta. For the sauce, I chop an onion and saute it in some evoo and then add the tomatoes, and the spices. In another pan, I am cooking the chopped meat with some spices. When the meat is done, I toss it in the sauce and add sliced sundried tomatoes. I pour this into a big bowl with the pasta and coat the pasta in the meat/sundried tomato sauce.

-Chicken Stir-fry over Rice
brown or white rice, chicken, spices for the chicken (I use ginger, garlic, red pepper flakes and black pepper), oil (i use a sesame/evoo oil mix), stirfry sauce (can be pre-bottled or you can make your own), package or frozen stir fry vegetables or fresh vegetables, (whichever you prefer/easiest & quickest)

I make the brown or white rice. As I'm doing that, I cook up the chicken in sesame oil/evoo mix and add the spices I listed above. When the chicken is cooked, I add the package of frozen/defrosted vegetables. If it is fresh, sometimes I cook them in a different pan so I have more control of how they get cooked and then toss them into the chicken pan. Once the vegetables and chicken are cooked and mixed together, throw in the sauce. I make my own using soy sauce, a dash of orange juice, a little hoison sauce, and garlic. Then you take this chicken/veggie/sauce mixture and put it over the rice.

-Grilled Cheese
2 slices of bread, butter, cheese, optional: cold cut meats, bowl of soup

Put some butter on the outside of the bread, put cheese in the middle, and fry in a frying pan until desired. Some people like to add cold cuts inside, like ham or turkey. This meal is good with a bowl of soup!!

-Sausage Quesadillas
1 box of frozen breakfast sausage, shredded cheese, tortillas, salsa, sour cream and/or guacamole.

I cook the breakfast sausage while shredding the cheese. Then, I cut up the sausage, warm up the tortillas and fill them with sausage and cheese and make quesadillas. When they are ready, I serve with either salsa and sour cream or guacamole.

-Scrambled Eggs with Veggies and Cheese
eggs, whatever vegetables you have leftover in the fridge, shredded cheese

In a frying pan, scramble the eggs and throw in the cut up veggies and cheese and cook until done!

-Buffalo Chicken Wing Dip
1 stick of cream cheese, 1 cup of blue cheese dressing, 1 bag of mexican shredded cheese, 1/2 cup of red hot sauce, 1 shredded rotisserie chicken

Mix altogether in a bowl. Put in a casserole dish and bake at 350 for at least 30 minutes until bubbling. I serve with tostito chips and celery, carrot and green pepper sticks.

-Bacon, Lettuce and Tomato Sandwiches
2 slices of bread, lettuce, tomato, bacon, mayonnaise

Toast two slices of bread and cook the bacon. On the bread, spread a little mayo and add the bacon, lettuce and tomato.

-Tuna Fish Salad
can of tuna fish, lemon juice, chopped celery, onion powder, black pepper, mayonnaise optional: bread, crackers, lettuce and/or cabbage

Mix all ingredients together. You can serve on toasted bread, crackers or over a bed of lettuce and/or cabbage.

-Egg Salad
hard boiled eggs, chopped celery, mayonnaise

Boil the eggs. Mix together with celery and mayonnaise.

-Ravioli with Garlic Bread
for meal: 1 package of frozen ravioli, 1 jar of sauce

cook the ravioli according to the package, warm up the sauce.

for garlic bread: Slices of bread, butter, garlic

Spread butter and garlic onto the bread slices and then cook in the oven at 350 until ready.

-Buffalo Chicken with Baked Potatoes
chicken, red hot sauce, potatoes

I grill the chicken and coat in red hot buffalo sauce. I bake the potatoes and serve on the side.

-Lemon Pepper Chicken with Lemon and Garlic Broccoli
chicken, lemons, black pepper, evoo, broccoli, garlic

I marinate the chicken in lemon juice, lemon zest, black pepper and evoo. Then I grill it.

For the side, I cut up fresh broccoli (or use frozen) and add lemon juice, lemon slices and garlic cloves and microwave it in the oven.

-Sausage and Peppers
sausage, onions, peppers, evoo optional: bread

I grill the sausages and cut them up
I cut up the onions and peppers and fry them in evoo.
I toss it altogether and sometimes serve on heroes/rolls.

-Taco Night
chopped meat (beef or turkey), can of beans, cup of frozen corn, red onion, salsa, seasonings for the meat, sides: salsa, shredded cheese, guacamole, nacho chips, etc.

I cook up the chopped meat and a red onion and season with taco spices (cumin, cayenne, garlic, cilantro, pepper, etc) and toss in a can of black beans and
a cup of frozen corn. I add salsa to the meat sometimes. Sometimes, I just put it as a side. It's up to you if you want to cook the meat in the salsa or not. Once that is done, I serve it with shredded cheese, guacamole and nacho chips. But you can also put it in soft or hard taco shells.

-Chopped Turkey with Fresh Herbs and Spices and Mashed Sweet Potatoes
package of chopped turkey, fresh poultry seasoning mix (in my supermarket they sell fresh rosemary, thyme and sage together), garlic powder, green peppers, onions, worcestershire sauce, sweet potatoes, orange juice

I cook up the ground turkey with garlic powder, and fresh sage, rosemary and thyme. I also season it with worcestershire sauce. I add in chopped onions and green peppers and cook until done.

For the mashed sweet potatoes, I bake the sweet potatoes in the microwave and then mash them together with a small dash of orange juice.
