Stuffed Mushrooms
Anyone have a good, vegetarian recipe for stuffed mushrooms? I want to make them for my Chanukah party. Thanks!

I made these stuffed mushrooms by Giada and they are delicious.
Ingredients 1/2 cup Italian-style dried bread crumbs 1/2 cup grated Pecorino Romano 2 garlic cloves, peeled and minced 2 tablespoons chopped fresh Italian parsley leaves 1 tablespoon chopped fresh mint leaves Salt and freshly ground black pepper 1/3 cup extra-virgin olive oil 28 large (2 1/2-inch-diameter) white mushrooms, stemmed Directions Preheat the oven to 400 degrees F.
Stir the bread crumbs, Pecorino Romano, garlic, parsley, mint, salt and pepper, to taste, and 2 tablespoons olive oil in a medium bowl to blend.
Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom. Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve.

I stem the mushrooms (but save the stems). Then, chop up the stems.
In a skillet, heat 2 tablespoons butter, 2 cloves chopped garlic, the mushroom stems, some breadcrumbs, and pecarino romano cheese. Heat for about 3 minutes.
Then I just stuff each mushroom completely full. Place in a baking dish, and sprinkle each mushroom with a little more cheese and some olive oil.
Bake at 375 for about 20 minutes.

I do this too, but I don't saute before stuffing. I stuff and bake. Before baking, I just drizzle olive oil over them.

this sounds easy and good
18 mushrooms (cleaned with stems removed) 1 pkg (6.5 oz) “Alouette” spreadable cheese 2 Tbs. Grated parmesan 1/8 - 1/2 tsp minced garlic
Add some diced red bell pepper for color and top with breadcrumbs.
Mix all ingredients except mushrooms. Fill mushrooms with mixture. Place on baking sheet. Bake at 375°F for 12 - 15 minutes.
