Substitute for "cream of soups"
I HATE cans of "cream of" soups. They are loaded with fat and basically unhealthy. If a recipe calls for say cream of celery soup, Is there anything I can use in lieu of the canned soup?

No this recipe was for beef strognoff. It was a can of soup plus a can of broth. But I do also find a lot of crock pot recipes calling for cream of soups as well.

Try sour cream.... I used to make a weight watchers version of it and it called for fat free/low fat sour cream.
I just did a quick search and came across this:
Beef stroganoff with dill and sour cream. Ingredients: •1 1/2 pounds lean stew beef or beef tips, cut into small pieces or thin strips •4 tablespoons butter or margarine •1 cup chopped onion, about 1 large onion •4 to 8 ounces sliced mushrooms •3 tablespoons all-purpose flour •2 cups beef broth or bouillon •1/2 teaspoon salt, or to taste •1/8 teaspoon pepper •1 cup sour cream •1 teaspoon dried dillweed Preparation: Heat butter or margarine in a large heavy skillet over medium heat. Add meat in about 3 batches, browning each batch quickly. Set aside and keep warm. Add onion and mushrooms to the skillet and sauté for about 5 to 6 minutes, until golden brown. Stir in flour; blend well. Gradually stir in beef broth. Heat until sauce is thick and bubbly, about 3 minutes. Stir in beef and dill. Add salt, pepper and sour cream; heat beef stroganoff through - do not boil. Serve beef stroganoff over rice or noodles. This beef stroganoff serves 6.

i make stroganoff all the time and dont use cream of soup. i usually add some sour cream and cream cheese.

i would just look for a totally from scratch recipe for what I wanted to make.
I am sure you can find one for stroganoff on epicurious. I made it once from the Joy of Cooking book and I KNOW I didn't use "cream of " soup b/c I would NEVER in my life use it.

I have a Weight Watchers cookbook that has a few recipes for "cream of" soups. I believe the base consists of equal parts skimmed evaporated milk and broth, and a few tablespoons of flour to thicken it up.

Depending on what the meal is I use sour cream, fat free evaporated milk, half and half etc.
I also have made cream of mushroom soup from scratch that I freeze and use when needed.
