Substituting avocado for butter - update at bottom
I would like to do this to make oatmeal chocolate chip cookies but not sure how they will turn out. Has anyone done this?

I've never heard of avocado as a butter substitute in baking.

I would try it! Avocado is sweet, I don't see why it wouldn't work. I wonder if you would need to add more liquid though?

I actually have a recipe for avocado chocolate chips cookies, I will see if I can find it. I've been meaning to try. I think I got it off of twopeasandtheirpod.com

I actually just made a chocolate avocado bundt cake for someone who is vegetarian and it sub the butter with avocado

I have used applesauce instead of butter numerous times, never tried avocado.

Thanks everyone . I found quite a few recipes online but can't decide which one to follow. I am going to try making the cookies with avocado and coconut oil in couple of days.

I made these couple of weeks ago after seeing rave reviews online but my dh and I aren't big fans. May be it was because I added goji berries which became mushy. I will have to try these without goji berries next time.

Update: I made these cookies today and they came out great. The recipe I used didn't have oil or butter in it but I added coconut oil since I am trying incorporate coconut oil in my diet. I actually used baking soda instead baking powder which the recipe has and they still came out good.
