substituting eggplant for zucchini

so i watched rachael ray today and gwenyth made her zucchini spaghetti dish
you basically just bread the zucchini, fry it and mix it in with the pasta
i thought i had zucchini but no i have eggplant do you think it would be a big deal to substitute it
i hardly ever cook with either so thats why i am asking,
i want to make something quick and easy and that my dds will eat
thanks

To me eggplant and zucchini can always be interchangeable in meals...go for it!

Quick suggestion for cooking with eggplant if I'm not too late:

Cut the eggplant into whatever shape you're going to be using it and place it into a colander and salt it for about 30 minutes then rinse the salt off before you start to cook. It makes eggplant WAY better and actually gets rid of a lot of the bitterness that makes people dislike eggplant. What it does is draw a lot of the moisture out of the eggplant, but then you rinse the salt off so it's not salty.

Then you can batter and cook it however you'd like. I do this when I make eggplant parm or if I'm just making a side of eggplant.
