substituting eggplant for zucchini
so i watched rachael ray today and gwenyth made her zucchini spaghetti dish you basically just bread the zucchini, fry it and mix it in with the pasta i thought i had zucchini but no i have eggplant do you think it would be a big deal to substitute it i hardly ever cook with either so thats why i am asking, i want to make something quick and easy and that my dds will eat thanks

Quick suggestion for cooking with eggplant if I'm not too late:
Cut the eggplant into whatever shape you're going to be using it and place it into a colander and salt it for about 30 minutes then rinse the salt off before you start to cook. It makes eggplant WAY better and actually gets rid of a lot of the bitterness that makes people dislike eggplant. What it does is draw a lot of the moisture out of the eggplant, but then you rinse the salt off so it's not salty.
Then you can batter and cook it however you'd like. I do this when I make eggplant parm or if I'm just making a side of eggplant.
