Suggestions for a kid-friendly vegetarian cookbook?
My 12 year old niece would like some vegetarian or vegan cookbooks for the holidays that would be somewhat easy for her to make. Any suggestions? I would also like to give her some cooking utensils/etc to go with them.

Aww, yay!
I became a vegetarian when I was about her age and that sparked a love of cooking in me!
Here are some that she would probably dig:
The Teen's Vegetarian Cookbook
Vegan Lunch Box (this is a personal fave of mine!)
Vegetarian Kids' Cookbook
Those are all pretty highly-rated and geared toward kids/teens, so easy-peasy stuff. I wish they had stuff like this on the market when I was her age.

I got this as a gift and love to use it:
How to Cook Everything Vegetarian
Some cookbooks are super-fancy and hard to find ingredients for (like the famous "Moosewood" one). This one teaches you how to make mashed potatoes, hard boiled eggs, etc. in addition to the fancy stuff. And the fancy stuff is broken down in layman's terms so a kid could follow it.

This is my ultimate favorite vegetarian cookbook ever, and I agree, it's a great gift. I have literally curled up on the couch and read it like it's a novel.
I'm just unsure if it'll appeal to a 12-year-old. It might be a little overwhelming IMO. If she's a bit more mature for her age, then absolutely, she will love it - especially if she is already pretty good in the kitchen. But if she's not quite there yet, then I'd hold off on this and maybe get it for her in a few years.
