Summer Recipes ??
looking for some new, fun, different summer recipes. Anything from bbq, fruit salads, desserts, smoothies, salads, etc.
Just looking for some different ideas.

I make this salad all the time inthe summer. It has no Mayo so it can stay outside for a long time.
3 BEAN SALAD
1 can Chick Peas 1 can Red kidney Beans 1 bag Frozen Green Beans (the cut kind) 1 bottle Wishbone Fatfree red wine Vinaigrette
Open and rinse both cans of beans
Defrost green beans in microwave (in a water)
Mix together with dressing (about 1/2 bottle).
Chill until ready to serve

Tortellini Brushetta Recipe... this is ridiculously easy, and can be served cold, or room temp...it's good for people that don't like mayo...
cook a pound of 4 cheese tortellini as directed on package...drain and then spray with cold water to cool.
mix with premade/store bought brushetta (I usually get it at costco, I get the tortellini there too)
serve sausage or steaks...or chicken, anything you like!

here's an antipasta recipe, just use your judgment on the vinegar and oil b/c it's usually wayyyy too much
Chickpea and Tomato Salad
Ingredients 2 15-ounce cans of garbanzo beans (chickpeas), drained and rinsed 4 tomatoes (about 2 lbs.), cored and chopped 4 large hard-boiled eggs, peeled and chopped 2 cups of chopped sweet onion (Vidalia, Walla walla, or another variety) 2/3 cup extra-virgin olive oil 6 Tbsp of white wine vinegar or sherry vinegar 1 teaspoon salt Freshly ground pepper Chopped parsley for garnish
Directions 1 Combine the garbanzo beans, tomatoes, eggs, and onion in a large bowl. 2 Separately mix the dressing ingredients in a jar or a small bowl - olive oil, vinegar, salt, and pepper. Pour over salad ingredients. Sprinkle on chopped parsley. Serve immediately. You can chill the undressed salad up to six hours, until ready to serve. Serves 6-8.

and here's a deviled eggs recipe I found last year, it was a big hit
INGREDIENTS
* 6 eggs * 1/2 stalk celery, finely chopped * 1/4 onion, finely chopped * 1/4 cup mayonnaise * salt to taste * 1 dash hot pepper sauce * paprika, for garnish
DIRECTIONS
1. Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel. 2. Cut eggs in half. Remove yolks and place in a medium bowl. Mash together with celery, onion, mayonnaise, salt and hot pepper sauce. 3. Stuff the egg white halves with the egg yolk mixture. Sprinkle eggs with paprika. Chill covered in the refrigerator until serving.

I make this easy tomato tart once a week in the summer. The recipe calls for goat cheese, but I've used mozzeralla and it is fantastic.

Fruit Salsa with Cinnamonn Sugar Chips...
One of my neighbors brought this to my house over the weekend as an appetizer and it was SO good! I think it would be especially good in the summer, too! Low Fat and satisfies the sweet cravings
Salsa Ingredients 2 apples, cored, peeled, and diced 2 kiwi, peeled and diced 1 cup strawberries, diced 1/2 cup orange juice 1 orange, zest of 2 tablespoons brown sugar, packed 2 tablespoons apple jelly or 2 teaspoons lime juice (depending if you want it sweet or tangy)
Chip ingredients (OR YOU CAN BUY STACY'S CINNAMON SUGAR PITA CHIPS INSTEAD OF MAKING YOUR OWN) 10 1/2 ounces flour tortillas, cut in triangles 1/2 cup sugar, to taste A few TSP of cinnamon, to taste
Combine apples, kiwi, strawberries, orange juice, zest, brown sugar, and apple jelly / lime juice together. Cover and refrigerate.
Place the tortilla wedges on a non greased baking sheet and sprinkle lightly first with water and then with desired amount of cinnamon and sugar. Bake the tortilla wedges at 325 degrees until warm.
Remove from oven and let cool.
Serve with fruit salsa.

Combine all ingredients for dressing and then pour over salad

I make a yummy salad in the summer-it is very refreshing...
I use bagged salad-any kind you like is fine really...
-one can of chickpeas -one can of mandarin oranges -dried cranberries-a handful or more -depending on what you like -spanish olives-whatever amount you want -slivered almonds-handful -cut up fresh strawberries-handful or more -Top with goat cheese -Raspberry Vinagarette in the bottle
Every time I make it, people rave about it!

Italian Potato Salad, It has no mayo as well so it lasts outside
Its potato's, olives , carrots, celery, red onions . You just mix with balsamic vinegar & a lil evvo,, Its really good..
Bow tie pasta w/ sausage this is reallyyyy good,
grill pinwheel sausage , any kind you like. after its cooked cut up & place aside. in pan saute' evvo & a whole head of garlic thats been finely sliced. after the garlic has been saute' add carrots , just as you would when you peel a carrot. then after that has softened up , addapprox 1/2 cup to a cup chopped/sliced up sun dried tomato's after that has cooked a lil add a bunch or corsely chopped arugula , ( or spinach) ., cook for aprrox 5 min, Add the cut up sausage to allow the juices mix with the sausage,
Add this mixture to a pund of bow tie pasta,,
Its so good, its a standard in our bbq's

I made this on Sun and it was really good! Everyone loved it and sooo easy.
SOUTHWEST LAYER SALAD
6 cups torn romaine lettuce 1 can (15 oz.) black beans, drained, rinsed 1 can (11 oz.) whole kernel corn, drained 1/2 cup Salsa 1/2 cup KRAFT Natural Three Cheese Crumbles 1/2 cup Ranch Dressing 1 cup broken tortilla chips
PLACE lettuce on serving platter or in bottom of glass serving bowl.
COVER with layers of beans, corn, salsa and cheese.
DRIZZLE with dressing; sprinkle with chips.

This salad is good but I like the other strawvberry salad where the dressing is Mayo based. You can use FF or lite mayo to keep it healthy. It is awesome!
