Thanksgiving - make ahead dishes
Any ideas for sides than can be made or fully prepped the night before?

fresh whole cranberry sauce some salads sweet potato casserole (except marshmallows would have to go on when you are rewarming it in the oven)

I honestly pretty much make everything in advance except the turkey and the gravy! LOL.
Some things I assemble and then bake right before serving (I do a baked mashed potato dish, a sweet potato casserole, stuffing, etc.).
Other side dishes -- like my corn casserole, carrot soufflé, etc. -- I assemble and bake a day or two in advance and then just reheat when ready to serve. A lot of these dishes can even be reheated in the microwave, which saves precious oven space.
I am all about making things ahead of time. I host a lot of holidays, and planning and making stuff in advance makes it flow so much more smoothly.

I have a bread stuffing recipe for the crock pot that I prep the night before. I have also done the "traditional" green bean and sweet potato casseroles the night before. Let me know if you want my notes!

I do the Pioneer Woman's mashed potatoes and I make that a day ahead. Also the whole cranberry sauce, sweet potatoes, and any desserts. Day of, I do turkey, gravy, stuffing, crock pot apples, and vegetables.

Pioneer Woman's mashed potatoes are the best! I've been doing it this way for the last few years. It makes things so much easier when you can prep them the day before.

Of course! Recipes are below! The corn casserole is the Paula Dean one, and the carrot soufflé is my family's recipe. Both are not exactly healthy fare, but perfect for holiday indulgence!

I will be posting not just about real estate sales, but home decorating, home maintenance, cooking/entertaining, etc.
Corn Casserole (Serves 6-8)
1 can cream style corn 1 can whole kernel corn, drained 1 stick of unsalted butter, melted 8 oz sour cream 2 large eggs, beaten 1 box Jiffy corn muffin mix
Preheat oven to 350 degrees. Mix the first 5 ingredients together [I usually use an electric mixer, but you could do it by hand, too.] Add muffin mix. Pour batter into a 2 quart baking dish that has been buttered well (or sprayed with nonstick cooking spray). Bake at 350 degrees, uncovered, for 60-75 minutes until set.
Carrot Souffle (serves 8)
1 2 lb bag of baby carrots 1 cup (2 sticks) of unsalted butter, melted 6 large eggs 1 cup granulated sugar 6 tablespoons all-purpose flour 2 teaspoons baking powder 2 teaspoons real vanilla extract
Preheat oven to 350 degrees. Spray a deep baking dish with nonstick cooking spray or butter it well [I typically use a 2 quart soufflé dish or a round white corningware type dish.] Boil carrots until soft; drain. Blend carrots with butter until smooth [I usually use my food processor to blend everything, but a blender or electric mixer would be good, too.] Add in remaining ingredients and blend until well combined. Pour batter into prepared baking dish and bake at 350 degrees for 45 minutes, or until knife inserted in center comes out clean. If top begins to brown too quickly, lower heat to 325 degrees, and continue to bake until inserted knife comes out clean.

I make just about everything on the wednesday before.
pies in am on wednesday green bean casserole stuffed mushrooms stuffed artichokes corn bread pudding (really like a moist bread) etc mashed potatoes i make on thursday as well as gravy and turkey

For those that make things the day before, how do you make sure that once its ready to serve its super fresh? Do you do the baking on Thursday but just prep the dishes day before?

We do apps, desserts, and casseroles early. We also peel potatoes and cut up bread the night before too.

Don't your potatoes get brown when you cut them the night before?
