The LIF Great Holiday Cookie Recipe Swap Thread...

Everything is done by hand (no mixers) so it's a little more work than some cookies.
Greek Butter Cookies
1 lb. unsalted sweet butter, softened 1 cup sugar 3 tablespoons baking powder flour as needed
Preheat oven to 350 degrees.
In large mixing bowl, begin by kneading the butter and slowly sifting in the sugar and baking powder. Mix well. Slowly sift in the flour - perhaps 1/4 cup at a time. I don't measure the flour at all so I can't even make a guess as to how much I actually use. Mix the flour in thoroughly and then add more. It's certainly better to add too little at a time than too much. Continue to add flour until a dough forms. Once the dough has begun to come off the sides of the bowl and your hands, you have added enough flour.
I make crescent shapes, but you can do whatever shape you want. I roll the dough into 1 inch balls, then roll them out the long way and bend into a crescent.
Bake for 20 minutes or until a golden brown color. While the cookies are baking, sift powdered sugar in a bowl. Immediately out of the oven, roll in powdered sugar. If I give as gifts, I add some freshly sifted powdered sugar on the top to make it look pretty.

Christmas Macaroons Makes about 28 cookies 2 egg whites 3/4 cup sugar dash of salt 1 teaspoon vanilla extract 1/4 cup all-purpose flour 1 package (7 ounces) shredded coconut green and red food coloring (optional)
Preheat oven to 325 degrees. Line 2 cookie sheets with foil or parchment paper. In medium bowl mix egg whites, sugar, salt, and vanilla. Add flour and stir until well blended. Fold in coconut and food coloring. Drop dough by teaspoon full about an inch apart. Bake 15-20 minutes until light brown. Cool on cookie sheet. Peel foil from cookies.

Ginger Crinkles
Best recipe I've come across. Have been making them for years now.
2/3 cup veg. oil 1 cup white sugar 1 egg 1/4 cup molasses 2 cups flour 2 tsp bakin soda 1 tsp ground cinnamon 1 tsp ground ginger 1/2 tsp salt --1/4 cup white sugar for rolling
1. mix oil & sugar thoroughly with electric mixer. Add egg & mix well. Pur in molasses. Sift and add dry ingredients until incorporated (will be too thick for electric mixer) 2 Roll tsp of dough into ball, drop into sugar and roll until coated. 3. Place on ungreased cookie sheet. Bake at 350 degrees for 15 minutes. Yield 2dz - I ALWAYS double this recipe
Tip...when forming into balls keep a bowl of warm water handy to keep dough from sticking to your hands.
These are pretty enough to give as gifts!!!

Peanut Butter Blossoms
2 Cups Bisquick 1 Can Sweetened Condensed Milk 3/4 Cup Peanut Butter 1 Tsp Vanilla Granulated Sugar Hershey Kisses
-Combine Bisquick, Peanut Butter, Condensed Milk and Vanilla
-Roll into 1 inch balls
-Roll in granulated sugar
-Flatten slightly and place on cookie sheet
-Bake 10 minutes at 350 degrees
-Remove from oven and top with hershey kiss, pressing lightly

Anise Cookies
2 cups sugar 2 sticks softened margarine 1 oz anise extract 5 eggs 3cups flour confectioners sugar (to dust on top)
Cream together sugar and margarine. Add eggs one at a time. Slowly add flour. Blend in anise.
Bake in a greased 10x15 pan for 20-25 minutes at 350 degrees. Sprinkle with confectioners sugar and cut into bite size pieces. (these are little bite size cookies, not anise toast)
Thumbprint Cookies
1/4 cup butter 1/4 cup shortening 1/4 cup brown sugar 1 egg (seperated) 1/2 tsp vanilla 1 cup flour 1/2 tsp salt 3/4 cup finely chopped almonds raspberry jam
Mix butter, shortening, egg yolk and vanilla thoroughly. Work in the flour and salt. Shape dough into 1 inch balls. Dip into the egg white and then roll in the almonds. Place 1 inch apart on ungreases cookie sheet. Press thumb into center of each cookie. Bake 10-12 minutes at 350 degrees until light brown. Let set 3-5 minutes on cookie sheet and then remove. When cool, fill center "thumbprint" with raspberry jam.

They have SUPER simple recipes online that you can make in the microwave! Never thought that would be possible, but they are really good.
