My mouth is watering! What do you think about replacing the milk with almond or soy milk? Have you or anyone ever baked with either before? I'm just curious if it would affect the finished product.

You can use almond or soy milk and you don't need to adjust the amount used either. They measure the same cup for cup.
The only thing I would recommend it to watch the baking time, it may bake a little more quickly so start checking the cake around the 25 minute mark just to be safe.
Also, be aware that because almond/soy milk doesn't contain the same amount of fat as regular milk you might find that cake isn't as dense and moist, it might be a touch drier. But give it a try and see what you think, maybe even halve the recipe the first time to see if you like how the almond milk works in it.

Looks yummy. And so pretty... I'm loving your bundt pan!
Speaking of bundt cakes- I saw a recipe today on Facebook for a red velvet bundt cake with a sweet cream cheese filling. I almost died.
