I am actually going to attempt to make these...but I don't have a deep fryer. I can just put in hot oil in pot right?

Yep. A heavy duty pot is fine. I actually made these in my enameled cast iron Dutch Oven. Worked perfectly.

You could definitely try but they likely won't have the same crisp compared to frying. I would place them on a rack inside of a baking sheet so that they are raised up and air can circulate all around them. Then bake at 350°F until they are golden brown, at least 20-25 minutes.
