these issues - "quirks" if you will - what do you define them as being?
-seems sensitive to loud noises (landscapers, the hand dryer in a public bathroom, thunder)
-dislikes the feeling of certain material (or sometimes tags being on the inside of a shirt)
-dislikes hands being sticky
if you classify this under a certain diagnosis, what other symptoms would there be? can you list them?
and when is something a quirk vs. a "problem" ?

It might be absolutely nothing, but my daughter had those "issues" along with disliking the feeling of sand on her feet, finger painting, being dirty, playdogh, certain food textures, etc. They told me that it is a sensory disorder, specifically sensory avoiding disorder. Her therapy consisted of playing with sand, going to the beach barefoot, getting dirty, and continuing to offer those foods she disliked. I'm not going to say therapy made it go away. She still hates being dirty, avoids a lot of foods, and likes to clean her hands whenever she thinks they have something on them. She is more tolerant now and actually enjoys finger painting and going to the beach as long as she can wash her hands or feet when she is done. They might just be quirks, but my daughter had so many of those quirks that they gave her a diagnosis.

More of a quirk... DS can't stand the hand dryers either.
Myself as a toddler/toddler couldn't stand the tags in my shirt either nor being sticky. To this day, I can't stand being sticky... I don't think there is anything wrong. Some kids are just sensitive..

it could be a sensory processing disorder but it all depends on how much it interferes with daily living, IMO. An OT would give you a rating scale and score it to determine it.

ITA--this is basically what differentiates a quirk from a potential problem IMO.
These could be sensory issues, but they could also just be quirks or dislikes. I think it depends upon the intensity of the dislike. DS refuses to wear clothing with buttons at the waist or shirts with bottons, same with jeans. Will not wear them and if you make him wear them, he is hysterical. He has sensory issues though definitely. So if DC doesn't like these things but can deal with them on some level and it doesn't interfere with life, I think it's just a dislike.

Im dealing with similar "quirks." everybody tells me its nothing but ive been debating getting him evaluated anyway. All of his quirks seem to be ones i share and It definitely doesnt hinder much of his daily activities and hes gotten SO much better so maybe its nothing or mild but i feel like if OT can help him get over some of this then its worth a shot...

We all have quirks or sensory issues to an extent. It only becomes an "issue" if it interferes with their daily functioning.

I don't like loud noises, sticky hands and tags on the inside of my shirts either!
Relax... you have a newborn. They do weird things at times. Don't over-analyze.
