those who don't eat processed foods -- egg-free breakfast?

I'll preface this by saying I am an extremely picky eater. Fair warning! Chat Icon

If you don't eat processed foods / preservatives, what do you eat for breakfast? I need some healthy ideas, but I hate eggs. Eggs and omeletts, e.g, are out for me. I don't have an egg allergy (so things made with eggs are okay) - I just don't like to taste egg.

I don't have a huge taste for fruit aside from melon and apples (but I do love melon and apples). I love pretty much all vegetables. I don't eat nuts at all.

Anyway, what do YOU eat for breakfast so I can get some ideas? Chat Icon

Sometimes I eat yogurt or cottage cheese and melon. Rye toast with some natural peanut butter and all fruit or polaner jelly. It's minimally processed stuff.

I like to saute shallots in olive oil, then wilt some spinach in and top with alittle feta cheese. I love that for breakfast.

I also like to saute shallots, add shittake mushrooms saute until soft then add some asparagus and top with a slice of muenster cheese.

Another thing I like is a piece of toast with a small amount of mayo, topped with a piece of tomato with oregano & salt, topped with cheese and broiled for a few minutes to melt the cheese.

1 cup of Stonyfield yogurt with a 1/2 cup of Grapenuts and some berries (raspberries, strawberries, blueberries) or banana. It's very filling. I generally don't get hungry until lunch time. And there's a lot of fiber in it too.

I eat oatmeal every day...yes its technically "processed", but the only ingredient is rolled oats.

I eat 1/3 c oat meal with 1/2 c almond milk + 1/2 banana and 1tsp of almond butter pretty much every day!

i don't know how much you are limiting the processed foods (completely or just minimally? are you still doing milk, etc?) so you can modify these ideas as you see fit. a lot you can also make at home if you'd like (breads, yogurt, kefir, cheese, etc.).

-quinoa with almond milk, hot
-kefir
-yogurt with fruit
-cantaloupe with cottage cheese
-oatmeal (made with almond milk is really good!) and fruit
-homemade muffins, pancakes, waffles, etc.
-applesauce
-baked fruit
-baked oatmeal
-apples and peanut butter
-celery sticks and peanut butter/cream cheese

you can also treat breakfast as you would any other meal which may open the possibilities for you.

I make a smoothie, I do use store bought almond milk and greek yogurt so I'm not sure if those are too processed for you.

Here is the smoothie

blend together
1.5 cups unsweetened vanilla almond milk
6oz plain nonfat greek yogurt
1 tsp vanilla
1 cup frozen blueberries
1 cup frozen strawberries
1 apple, cored but not peeled

Once that is blended add in 6 cups of spinach and blend.

I love this smoothie and have it every day Chat Icon

another idea that i do for my daughter is frozen yogurt. put some yogurt (greek or on the thicker end) in a blender with frozen fruit of your choice and pulse until it's the right consistency.

Thanks for the great ideas, everyone! I really appreciate them.

As far as processed foods go -- Perhaps "whole" foods was a better way to describe it -- or natural foods? Maybe there isn't a good word! Trying to stick to foods without preservatives, but milk, frozen veggies (assuming no other ingredients), etc. are all okay even though they are technically "processed" in some way. Bread without preservatives or HFCS, etc. will probably stay, too. It's a slow transition, but we are trying!

Does that make sense? I'm not trying to be a hypocrite -- just couldn't find a better or concise way to say what I meant. LOL.

i have either a smoothie (ice, non-fat plain yogurt, banana, blueberries, splash of milk)

a light whole grain english muffin with peanut or almond butter and sliced banana

oatmeal with banana/blueberries

I second the oatmeal and greek yogurt ideas. You could always try overnight oatmeal- prep it in the crock pot the night before, turn it on low right before you go to bed and when you wake up its ready. SO yummy and you can make it to your own personal taste

I really love it, and I have found that I really look forward to it. I found the basic recipe on a Green Smoothie Challenge website ad then tweaked it a bit over time (I added the yogurt for more protein and vanilla for flavor). The challenge was to to have a "green" smoothie everyday for two weeks and see if you feel a difference, I notice a huge difference and now even take my blender on vacation with me so I can have my smoothie Chat Icon

We are doing the same thing, I don't know the word for it either Chat Icon I am even starting to experiment with making my own bread ...we'll see how that goes Chat Icon

Raw whole almonds stuffed in pitted dates.. 1:1 ratio

I usually make these in batches, and I grab a few before heading out.. sometimes I take extra raw almonds with me.. holds me pretty well..

ETA: this morning's breakfast was hummus and cucumbers.. yum yum yum
