we drove to NY when miki was 16 months. We brought goldfish, fruit, water, juice, chips, etc
it was doable but not fun by any means

we didn't take a road trip - but we flew to Italy with Jack.

Ummm...we brought every snack in the house! Cheerios, raisins, cereal bars, animal crackers, banana, orange (peeled in a ziploc before we left) Juice, water
I brought books, stuffed animals, a talking elmo book and a portable dvd player and we didn't use the dvd player - he liked to "find" things outside - like trucks and cars and we did colors etc.

Re: Those who have taken road trips with DC...
We've gone to Vermont (7 hrs) and to DC in a hurricane (8 hrs)
I brought her regular snacks (gold fish, animal crackers, cheerios), plus Pirate's Booty, rice cakes, and ...that's it I think. Just something different for the novelty, KWIM?
Stopped at Friednly's and Cracker Barrel (not places I would normally go to but figured they would have stuff she'd like and they did).

Re: Those who have taken road trips with DC...
We take a lot of trips and even drove to FL. We take a cooler with yogurt, sliced cheese (cause my kids will eat it in their hand) water, juiceboxes and whole milk for my littlest one. Then we pack a bag kept within reach of fruit(fresh or in cups), cheerios, goldfish, granola bars, chips, cookies, whole grain cinnamon raising bread or mini bagels. I often bring pbj.
For long car rides I definately use my portable dvd players, but keep an easy to reach bag of activites near my older one. That includes a new color wonders book, stenciling book, his leapster, sa couple of action figures or cars, a magnadoodle. I always try to take all of these things away a few weeks prior so that my ds is excited to see them again. I am also sure to pack new coloring books. I use these in restaurants on vacation too.
For my dd, I packed a whole bunch of little toys in a bag near me and handed them to her one at a time and basically prayed that they both would sleep. The trip to Fl was not too good with a six month old and we ended up doing the bulk of our driving through the night so that she would sleep. We are hoping for an easier time this Dec when we do it again!
