Thought I would share...Stuffed Eggplant with melted gorgonzola cheese
DH and I went out to dinner on Sat for our anniversary and I had a stuffed eggplant appetizer that was delicious. I have made stuffed eggplant before but I have made it with sauce and breading. This is a little bit different. I have thought about this eggplant since Saturday so I attempted to make tonight. It came out delicious! Here is the recipe.
I took an Italian Eggplant (the small ones) and cut it in half. I scooped out the center and chopped it up. Then i took the skin and boiled it for about 5- 10 minutes. I chopped up about 1/2 an onion, 1/2 of red pepper, 1 zucchini and 3 garlic cloves. I sauteed the eggplant, zucchini, onion, pepper and garlic in a pan with EVOO until tender. I stuffed the 2 eggplant skins with everything that I sauteed and sprinkled crumbled gorgonzola cheese on top and baked it for about 20 minutes until the cheese melted and browns slightly.

ohhh man, that looks and sounds delicious! I just made eggplant & zucchini tonight and wish I would have seen that recipe before I started cooking.

OMG that looks sooooo good.. I would make it but I don't think DH would eat it, I hate that he's so picky!!
