Anyone know what tiles are most eco-friendly and/or non-toxic?

There are so many variables involved, you really need to check each brand individually. Some natural stone is quarried after clear-cutting old-growth forests, which is very non-eco. There is a lot of heavy machinery used to quarry and cut the stone, then ship it around the world. Local stone is more eco-friendly since it takes less to get from the quarry to your house.
Ceramic tiles can use different materials, and what the material is, how it is gathered, and how it is shipped makes a big difference.
Many hardwood and laminate floors use toxic glues, even if they are made from "green" materials.
Sorry.... I probably gave you more questions then answers.... I've learned in doing my own research that "It's not easy being green."
