To dredge or not to dredge?
I need to change up my usual chicken cutlets so tonight I was going to dip in buffalo sauce instead of egg wash and then coat with panko mixed with a packet of buffalo seasoning. Do I really need to dredge the cutlets in flour first? It's such a PITA but I want them nice and crispy!
