Stuffed Peppers
2 lbs ground beef, I use Sirloin 1 bag of boil in bag rice 1 can of tomato sauce 2 cloves of garlic, minced 1 can of Leseur peas (or any peas) 1 yellow onion-chopped 1 teaspoon of oregano 1/3cup fresh chopped parsley 1 teaspoon sage 4 large green peppers 1/2 cup of parmesan cheese salt and pepper
Cut top of peppers off, and remove seeds and insides. Set aside.
In a frying pan, add ground beef, and brown until cooked.
Add garlic, sage, oregano, parsely, parmesan cheese, and onion. Cook until onions are wilted.
Pre heat oven to 375.
Boil rice until cooked, and add to meat, along with1/2 can of the tomato sauce. Cook for 15 minutes.
Take peppers, and fill with meat mixture. Add rest of tomato sauce into roasting pan, or whatever you are cooking the peppers in.
Sprinkle additional salt, pepper, oregano, parsley, and parmesan cheese into sauce.
Note: I use fresh herbs for the meat, but dried herbs for the sauce in the roasting pan.
Cook for 35 minutes. Peppers must be tender and cooked thouroughly. Sprinkle some more parmesan on top of the peppers about 25 minutes into cooking.
Remove and let sit for 5 minutes.
Enjoy!
I serve this with warm italian bread, and a Ceasar Salad.
