Re: Tortellini Salad Recipes?
Oh oh I got one!!!
Steam the following: broccoli (cut up small), chopped carrots and chopped red peppers. Gotta do it separately cuz broccoli takes longer than the other two
Dump into a bowl with the cooked tortellini
Let it cool in fridge
Before you serve it add: some chopped red onion Olive oil (my mom adds a little lemon too) Parmesan cheese Salt pepper
I eat this all summer long

Re: Tortellini Salad Recipes?
I make it pretty simply - tortellini, sun dried tomatoes or red peppers, bocconcini, fresh basil and olive oil. I season it with salt, pepper, onion powder & garlic powder and I just taste as I go.

Tortellini Salad Recipes?
Mine is cheese tortellini, red and green peppers, cubed mozzarella and pepperoni (I cut it so it's bite sized). My mom adds black olives to her version.
Dressing is equal parts red wine vinegar and olive oil, and salt, pepper, onion powder and basil to taste.

Re: Tortellini Salad Recipes?
I use one package regular and one package tri-color cheese tortellini, halved grape tomatoes, fresh mozzarella balls, diced cucumbers, black olives and diced pepperoni cubes. Dressing is olive oil and white wine vinegar, salt, pepper oregano. Also have used tortellini and bow tie pasta for "buttons and bows" pasta salad.

We've done it as a meal before, especially on hot days.

Re: Tortellini Salad Recipes?
No measuring, I make this all to taste and just eyeball everything.
Cheese Tortellini (usually 2 16oz bags) Sicilian Cracked Olives (about 1 lb) Black Olives (1-2 cans of large olives) Fresh Parsley Red Bell Pepper, diced Red Onion, sliced thin
Cook the tortellini al dente. Rough chop olives (taking the pit out of the green olives) and toss them into bowl. Handful of fresh parsley, about 1 diced red pepper, and about 1/2-1 red onion, thinly sliced. Add everything to bowl. Toss with the oil from the green olives, add some more EVOO as needed. Salt and pepper to taste. Delish!
ETA - Sometimes I add chunks of fresh mozzarella too!!

I wouldn't freeze it. Yuck!!! Everything would be so mushy when you defrost it. Make it fresh and serve.

Tortellini Salad Recipes?
If you really want to do it up... Add a jar or two of marinated artichoke hearts.
And celery salt and some of that red salad seasoning
