Tuna Salad Recipe...
How do you make it taste like its from the deli? Do you use, albacore? light tune? in water in oil?

Solid white albacore, lots of mayo, sometimes lemon juice, sometimes celery sometimes onion (red or white).

Different delis do it different ways.
I use solid white albacore in water. I add mayo, a little sour cream or ranch dressing, chopped onion, chopped celery, some chopped dill, a little lemon and a bit of dry mustard. S&P to taste.

My mom used to make all the salads for a deli when I was a kid. They used the chunk light tuna (the dark one) to make tuna salad, mayo and celery. It costs less money for the delis to use this so therefore, they can make a whole lotta tuna.

It might be their mayo! They all really have different flavors. Hellmans vs miracle whip, etc.....

i worked in delis for several years. the trick to awesome tuna salad is bread crumbs! people never believe it, but try and you will see. They use mayo celery, bread crumbs and thats it!

My ex used to do this. He was a tuna connoisseur! He would always put breadcrumbs in and we'd joke about the fact that he could probably have made a tuna man out of his tuna!
But it DID taste really good!

i worked in a bagel store and they use to crush up white bread, i think they also put in a little bit of brown mustard, it was delish!

I agree with using the chunk light tuna. I worked in a bagel store who was known for their tuna and they used to use this.

I too have an obsession with deli tuna for some reason. Someone who worked in deli told me a few things. One, put cans of tuna in fridge before you prepare it. Another was to use breadcrumbs. And another was pickle juice, a little bit of mustard and relish.

I don't have a recipe but I LOVE deli tuna...I can never make it as good. Since DH doesn't eat tuna, I dont even bother making at home anymore, I get it at the bagel place or dinner lol

I usually add a little garlic and onion powder (or fresh chopped onions). I also add just a little bit (like half a teaspoon) or hot dog relish and a small squirt (less than half a teaspoon) of mustard.
Then I add the lowfat mayo. Most delis probably use full fat, that could account for the taste difference.
I will try to breadcrumbs idea, sounds good!
Chopped fresh parsley tastes good too, if you have some extra around.

My mom used to use torn pieces of white bread. Always Hellmans full fat mayo, salt, pepper, onion S&P..sometimes a little garlic powder.
