Turkey Novice - how do I know it is defrosted enough?

okay, sorry for the stupid question, but I just got my bird today and it frozen solid - 20 lbs!

I want to use the Alton Brown recipe and it says to defrost 2-3 days before, so I guess today is 2 days before and I have it in the bottom shelf of my frig.

How do I know if it is defrosted enough to brine tomorrow night? And if it is not defrosted through, can I brine anyway?

And what happens if day of, it is still not defrosted?Chat Icon

Can I just stick it in the oven as is? I have no clue!

It probably won't be fully defrosted by tomorrow night, but you can brine it anyway. The salt will probably help get it fully defrosted by the time you have to get it in the oven.
