I find this very odd. It's almost like she is using the kid's events to have a "holiday party". I would generally avoid having the kids' things on holidays (mother's day in particular), but if I were forced to do it, I would totally understand if people said no.
However you look at it, I think it's inconsiderate.

I think she'll keep doing this on special holidays if no one points out how inconsiderate it is.
I would respond that you would love to attend, however NYE is a family celebration and you would like to celebrate with your children and your husband so you need to leave by 9pm.

I would decline events when they conflict with other plans, traditions, etc. Seems like a habit with her. I would think that someone who routinely books things on other holidays must subscribe to the opinion "if they can't come, so be it" so I don't think she can hold it against you.

I would decline the NYE event as it is a FAMILY holiday and leave early from the boys b-day on SBSunday saying that you have people coming over to watch the game. As Godparents, you don't have much choice with the Christening, BUT I would not be the last one to leave. Stay a respectable amount of time and leave saying you have dinner plans with YOUR mom! Some people are sooooo rude

VERY inconsiderate IMO. Seriously, people have lives. I'm sure you would be more than happy to celebrate all those great events on days OTHER than holidays/big days. She is being very selfish to everyone she invites to those parties.
As for her child that's born on 12/31, I could see her wanting to celebrate on the child's actual birthday, it's fair to the child (kind of like kids born on Christmas or other holidays), but maybe she could do a brunch or something instead, for EVERYONE, that way you can still be all together and could still have NYE plans.
ETA: Why is the 12/31 party girls only???

I didn't understand this either. It seems to be a trend-a friend had a ladies only luncheon for her DDs first birthday. It was just women chasing their kids around.

That is crazy I usually don't get worked up about little things but this seems to be a pattern with her.
I would definately tell her that you are bringing DH as you like to be with him on holidays especially NYE. Maybe she will get the hint!!

Girl, I would say know in the situations you can, i.e. NYE party and Super Bowl...There has to be limitations.

I would consider making other plans that include your DH. Thank he politly for the invite, but decline because you feel that it is important to ring in the new year with your family together.

This is inconsiderate - It's one thing if you would all be together anyway (Like if you normally celebrate NYE together, for her to just offer to host and turn it into a night to celebrate the kid's BDay w/ the family) .........Same thing for the Superbowl IMO - But again, that's ONLY if you all spend it together ANYWAY - NOT that you're now obligaed to go there and have to decline any other invitation -
But: 1. - WHY does this have to be 'girls only' ?? WHY would you want to spend NYE w/o your DH? And what if you and DH had plans to spend NYE w/o your OWN kid(s)? 2. Start declining the invitations- it is NOT unreasonable for you to already have plans on ANY of those days that you have 'already committed to' .....If she were picking a random Sunday, Ok, she can get annoyed if you don't show up - But NYE, Superbowl Sunday, MOTHER's DAY ??? - Come on !!! ??? And when she does get annoyed, it's your perfect opportunity to explain to her why you have to decline the invitation -
