vegetable lasagna no pasta
Do you cook the thin sliced eggplant or zuchini or just layer it raw?

I think it would just get too mushy and just be a pile of veggies...not sure if you fry but if you bread the eggplant or zucchini and fry it with little oil it will give the lasagna some substance.

If the sky was the limit for my caloric intake, I would fry them up in a heartbeat! I guess I'll bake them a little so there is somewhat of a crisp.
