Re: Vegetable Recipes for Chanukah or Christmas
What do you mean by vegetable recipes? Are you looking for entrees featuring vegetables only? Side dishes? Appetizers? Let me know and I'll try to help you out!

Re: Vegetable Recipes for Chanukah or Christmas
spinach balls:
2 pkgs (no salt) chopped spinach, cooked and drained 2 cups Pepperidge Farm Herb Stuffing (can add bread crumbs if needed) 2 large onions finely chopped 6 eggs, slightly beaten 3/4 cup melted butter 1/2 cup Parmesan cheese 1 T Garlic Salt (or a little less) 1/2 t crushed thyme 1/2 t pepper (recipe calls for 1 t, but I use less) Mix all the above ingredients together and form WALNUT sized balls. Place on well greased cookie sheet and freeze. Then store in plastic bag. When ready to serve, bake at 350 degrees straight from the freezer for 20-25 minutes (until firm, but not hard).

Re: Vegetable Recipes for Chanukah or Christmas
Easy peasy side dishes:
Sliced Potatoes, Sweet Potatoes or Asparagus: Spritz with olive oil, sprinkle of rosemary and salt, bake. Potatoes will take a little while, asparagus only takes about 10 minutes.
Breaded zuchinni sticks (fry 'em for the occasion) - I have a recipe somewhere if you'd like it
My mind is blank right now, but I'll try to think of some more.

I'm making green beans (the thin ones) with shallots and bacon. Let me know if you want the recipe.
