Vegetarian and meat eater couples!

Can we share some recipes or meal ideas that satisfy the insatiable appetites of BOTH people? Chat Icon

I will say that I have gotten over my fear of touching chicken. In fact, I don't really touch it. The tongs do. So I will prep for XXX parmesan and I'll do eggplant slices and dip in the mix, then chicken in the mix. I'll fry the eggplant first, then the chicken. I will then prepare in 2 different pyrex dishes.

Re: Vegetarian and meat eater couples!

I'm not vegetarian but I do cook for veggie friends. I find it much easier to prepare one dish and serve the meat/protein portion tossed in afterwards or just on top. For example I'll make a mix of squash, artichoke hearts, tomatos, onion etc. And in a seperate dish I'll make some basil chicken then just plate meat-eating meals with the chicken tossed atop and the veggies just as is.

Not sure if that makes sense, but it never seemed like a big deal to just cook for the veggies and then make a little meat to go with it to satiate others.

Same can be done with a simple couscous salad mixed with feta, spinach, garlic, onions, chickpeas. Make it plain, prepare chicken seperately and then mix together.

Salads - for DH I will top with grilled chicken or steak
for me I will top with grilled shrimp or grilled
portabella mushrooms

BBQ - I will make tinfoil meals ---I will make a general topping (white wine, garlic and fresh tomatoes/ mixed vegetables / fresh herbs with extra virgin olive oil ect....) and place fish in one package and chicken in another

I will also grilled or broil or bake tons of mixed veggies and for me I will place that over rice/cous cous and for DH I will add some chicken or beef to it

Stuffed peppers--for me I will stuff with brown rice and mixed veggies and for DH I will stuff with brown rice, mixed veggies and turkey ground meat

Pasta with mixed veggies in a garlic and light oil sauce and add chicken for DH

I make a bean burger that DH loves ---if you want the exact recipe let me know.

I will make tacos with peppers, onions, mushrooms, zucchini ect and make the meat or chicken on the side

Vegetarian chilie and mix the meat in at the end in a separate dish for DH

Re: Vegetarian and meat eater couples!

I usually make two different dinners every night and try to make sure there is enough for both of us for at least one more night.
